By Novo method for activity determination of the Immobilized Glucose Isomerase (IGI) - Sweetzyme T, the effect of magnetized substrate on IGI activity was studied.
The mechanism and kinetics of the isomerization of glucose to fructose catalyzed by immobilized glucose isomerase (Sweetzyme Q) as well as the active-site groups on enzyme were studied, inferring that the activated form of glucose is an open-chain structure.
