In the present study, the carambola and celery pomace which are available in large quantity as byproducts in juice production were used to prepare insoluble fiber materials. Different micronization treatments such as ball milling, jet milling and high pressure micronization were applied to reduce the particle size of IFs to micron scale. Particle size reduction resulted in lowered bulk density, increased surface area, alternation in functional groups, and enhanced physiochemical properties such as emulsification capacity, swelling ability, solubility and cation-exchange capacity. Particle size changes therefore significantly affected the properties of different pomace IF samples.
